Potatoes can do much more than just be boiled... This was proven by Sophia Rosa Antorini from the Michelin restaurant Restaurant Domæne over the weekend, when she, along with her assistant Nicolaj Hvid Rasmussen, won this year's potato title after 5.5 hours of intense competition.
Culinary Institute by VejleErhverv holds the annual Potato Award, where some of the country's most skilled chefs are represented. Here, the "ordinary" root vegetable is transformed into magical dishes, all with the potato as the main ingredient. The selection and judging are carried out by professional judges who evaluate based on the following criteria: presentation of the dishes, service, taste of the dishes, and kitchen technical skills.
Restaurant domæne is proud that it was Sophia who won the victory in 2024. Her talent for ingredients, taste, and elegance is greatly reflected in the winning menu, which consisted of:
Appetizer: Pickled potato and celery with lobster salad, leek flan, and smoked crème fraîche.
Main course: Confit and glazed potato with potato croquette, steamed pike-perch, caviar, and mushrooms.
Dessert: Potato cake with pear compote, potato mousse, potato ice cream with marzipan and crumble.
"I am a chef because I love cooking, using my curiosity, and seeing how sharply I can work under pressure. A competition like the Potato Award lifts me as a chef and also contributes to fulfilling the ambitions we have for domæne. I love experimenting and getting to the core of the food experiences I want to give people," says Sophia Rosa Antorini, Chef, Restaurant domæne.
At Restaurant domæne, our task is not to manipulate, but to refine and enhance, which is exactly what Sophia Rosa Antorini did with her winning menu.
"Because it is the Potato Award, my main source of inspiration has been the many potato varieties that exist and what different things can be done with them. Another source of inspiration is the way we work with ingredients at Domæne. When we work with taste, we always seek to celebrate what the individual ingredients contribute. It has been fun and challenging to work with potato varieties because they can do something very different in terms of taste and texture," concludes Sophia.
